Kolački Cookies

Dough & Fruit Jam Filing

Ingredients:

  • 3 ounces cream cheese

  • 1/2 cup butter, softened

  • 1 cup all-purpose flour

  • 1/2 cup any flavor fruit jam

  • 1/3 cup confectioners’ sugar for decoration

Directions:

  1. Mix cream cheese and butter until smooth. Add flour slowly until well blended. Shape into a ball and chill overnight or for several hours.

  2. Preheat oven to 350 degrees F (180 degress C). roll dough out 1/8 inch thick on a floured pastry board. Cut into 2 1/2 inch squares and place 1/2 tsp (approx) of jam or preserves. Overlap opposite corners and pinch together. Place on ungreased cookie sheets.

  3. Bake for 10 to 12 minutes in the preheated oven. Cool. Sprinkle lightly with confectioner’s sugar.

Cheese Filling

Ingredients:

  • Two 8 oz. packages of Cream Cheese - Room temperature

  • 1 cup sugar

  • 1 egg yolk

  • 1 tsp. vanilla

Directions:

  1. Cream together cream cheese and sugar.

  2. Beat in Egg and Vanilla.

  3. Chill before using.


Žlinkrofi (Slovenian Dumplings)

Dough

Ingredients:

  • 4 cups flour

  • 1 teaspoon salt

  • 2 tablespoons oil

  • 2 beaten eggs

  • 1 cup warm water

Directions:

  1. Place flour in bowl.

  2. Add salt and beaten eggs.

  3. Add the warm water and oil to make a soft doguh.

  4. Knead dough until soft and smooth.

  5. Set in a warm place to rest for an hour.

Filling

Ingredients:

  • About 2 pounds of sausage, ham, boneless beef or any other kind of cooked meat

  • 2 eggs

  • Medium onion, chopped

  • 1 clove garlic, minced

  • 1/2 cup breadcrumbs

Directions:

  1. Make sure all meat is cooked. Grind meat.

  2. Saute onions, add to meat.

  3. Add all other ingredients.

  4. Mix well.

Assembly

  1. Roll out dough on lightly floured board.

  2. Cut into 2 1/2 inch squares

  3. Place about one tablespoon of meat mixture into center of dough.

  4. Take the opposite ends and press together.

  5. Press the longest end in the center to resemble the shape of a bow or boat.

Option to Pan Fry with Breadcrumbs

  1. Boil žlinkrofi in a pot of boiling water

  2. Melt butter in pan

  3. Add salt and add plain or Italian breadcrumbs to the melted butter

  4. Pan fry žlinkrofi

Option to Add to Soup

  1. Boil žlinkrofi in a pot of boiling water

  2. Transfer žlinkrofi to boiling hot soup broth

Option for Frozen Storage

  1. Prepare a sheet pan with wax paper. Lightly four on top of wax paper.

  2. While the žlinkrofi are still uncooked, place them on the floured wax paper sheet pan.

  3. Place in freezer for a minimum of 20 minutes.

  4. Store frozen žlinkrofi in Ziplock bags.

  5. To use, boil from frozen and then add to soup or pan fry.
